I am planning on brewing up a christmas ale this weekend. I have been looking around and have seen a wide range of recipes. I am doing a 5.25 gallon partial mash with an OG 1.076. I will be using wyeast belgian strong ale yeast. This is my first holiday ale and want to know if im on the right track when it comes to the spice amounts. Any advice would be greatly appreciated.

Spices: ( last 5 minutes of boil )

1 tsp cinnamon
1/2 tsp ginger
1/2 tsp allspice
1/4 tsp nutmeg
1/8 tsp cloves
1/2 bitter orange
 
You're definitely on the right track. I make one with similar amounts, although only 1/2 tsp cinnamon and maybe 1/4 tsp allspice. You can always add more at bottling/kegging if you think it needs it.
 
any benefit to using a couple of cinnamon sticks rather than powder other than it not settling into the fermentor? and any opinions on adding medium toast french oak cubes?
