So I've been fermententing my organic apple juice for 8 days now. It stopped bubbling after the 3rd day. I checked on it today and its actually clearing up. Does this mean its done fermenting? I tasted a small glass of it and it tastes like dry wine
 
Most of the sugar has probably fermented, but it could pry use some time to mellow. My cider stopped after about 5 days but I still let it sit for another 15 before touching it.
 
It could still be fermenting, just very slowly. Watch your airlock for an extended period of time, chances are you'll see a bubble after a while.

Definitely let it mellow out, I rushed my first batch and slightly regret it, still drinkable but not exactly something to write home about..
 
Sounds like you might be done, but as the others said, give it time. I never rack my brew until at least two weeks have passed. I know its tough, but give it time and you will get better results! :)
