You shouldn't get any abv% increase during back sweetening. The fermentation should be complete before you start to back sweeten. If you want to increase the ABC, then use the calc tool on the got mead site to fugue's it out. For a 1 gallon batch, you won't need much.
 
im trying to increase the sweetness of the mead not increase the etoh. i expect ti sorbate/sulfite then backsweeten with honey. just trying to guesstimate how much honey i need to raise the specific gravity a measurable amount....for example a certain amount of homey will raise the specific gravity a certain amount in a 1 gallon container...just looking for a rule of thumb around about.
 
ballpark numbers, serious estimations as there are variables that will change all of this but in a 1 gallon batch , 1oz of honey will give about 2 gravity points. so if your gravity is 1.000 and you want it up to 1.01 add 5oz of honey, 1.015 add 7.5oz of honey, 1.02 add 10oz of honey.......
