Original Recipe (Switchback Clone):
OG: 1.056
FG: 1.014
IBU: 35
Yeast: Safale 05
Batch Size: 5 Gal - Boil volume 2.5
Boil: 60 Min
Steep Crystal 40L (12 oz) - 20 Mins
2lbs Breiss Wheat DME
4lbs Breiss Pilsner DME
.5oz Simcoe 60 Min
.5oz Sterling, Vanguard, Saaz each 10 mins
Primary 7 days
Secondary 14 days

I made this original batch about 4 weeks ago, and my thoughts are that this is going to be good once it carbonates, and conditions a little more in the keg. The hops are not going to change... but anyone have any suggestions to the grains? Switchback originally calls for "Pale, Carastan 13-17, Carastan 30-37, Carastan 70-80, and a little black malt". Should I stick with Crystal 40, or can I mix it up, a little 20, 40, 60, and a small amount of black? Will that change the taste if I'm only steeping the grains?
 
IMO carastan has a completely different flavor profile than American crystal. I would order some of you're trying to truly replicate that flavor. Rebelbrewer.com carries those carastan malts
 
how did it come out? went up there a few weeks ago, and they should be bottling in 22's next year
