About two months ago i started on my cider where it has sat since. Today i am planning on racking into a keg and back sweetening. My plan is to pour a can of apple concentrate in to the keg add 1 1/2 tsp potassium sorbate and a crushed campden tablet the rack the three gallons of cider on top. Then pressurize and cool. Any thoughts?
 
Sounds legit to me!

You may not even need the sorbate or campden if you plan on drinking it in a relatively short period. 3 gallons won't last very long ;)

If you are worried about it restarting fermentation just 'burp' the keg every day or so.
