Degassing after adding sparkolloid?

Is it still ok to degass a week or so after adding sparkolloid and re-racking after all of the yeasties fall out of suspension?

Yes, but after a couple of rackings it may not be necessary to degas. Degassing is only useful for rushing to bottle (like with kits) or when the wine "holds" onto the co2. That's more common in the winter, with colder temperatures, than it is at this time of year for me.
