my fermentation cabinet (okay, freezer) where my 2 batches are open fermenting.

3+ years of brewing and this is the FIRST time this has ever happened to me.

Sumon-o-beotch was in there for at least 12 hours mucking about during the post pitch lag phase.

Oh Well. Time will tell.

Yikes!

I really do not worry much about infection/contamination but one thing that does make me a little nervous is flying insects.

This was my first season where I got a dose of fruit flies in my house during the Summer. So far I have come through without those little bastids mucking up the works but still . . .
