Using persimmon juice

The guy I work for has a bunch of persimmon juice from a local grove, and asked if I would be interested in using it in a brew. Anyone have experience using it? I did some searching but didn't come up with much. I was thinking about making a pretty standard pale ale and racking onto a pound or so of boiled juice in secondary... Any ideas?
 
there's a persimmon tree in my friends back yard. we added it to moonshine...not so great.

i'm intending to try it in apfelwein next season :) i think it'll be tasty.

not going in my beer, tho.
