I have an ESP that has been in conditioning for 2 weeks, I chilled it for about 6 hours and opened it. No real carbonation, some but nothing in the body.

Should I wake the yeast up by getting it in motion OR should I just step away from the bottle for 2 more weeks?

It isn't necessary, but you can if it makes you feel better.

Remember though, you are shaking up everything, not just yeast.

Give it at least another week at 70F (bottle carbonating) and then chill the bottle for 5-7 days before pouring. You need to give it time to get the CO2 into solution/the beer.
