So I have a mead that's 124day old and I want to change it to a melon mead, can I??
it's a 15lb of honey 5gl batch if it finishes like the last it will be around 14% abv
 
I don't see why you couldn't rack it onto some fresh melon for a few weeks to a month?
 
You can add some potasium sorbate, and wait a day or two before you add the mellon and you shouldn't have to worry about the yeast starting back up again. THe yeast starting up again won't add flavor, just more alcohol.
 
Going to want that explained a little bit more. not so much afraid of the yeast starting as I just want the natural strawberry's flavors. That said I don't need to be any higher than it is already.
