I am living in North Dakota Were it is down right *&(&^%% Cold and I recently tried a winter warmer and now i am trying to find a recipe for it so i can make one does any one can anyone help?
 
I've got two in my book....

would you rather a cinnamon nutmeg clove kinda beer or more of a straight up beer kinda winter warmer?
 
Heres one I made up combining Sam Adams Winter Lager recipe with a holiday ale from Austin Homebrew Supply, havnt tried it yet, still in the fermenter, but should be awesome... I call it 12 Below, stealing the idea from 2 below from New Belgium, I call it 12 below though because of the 12 ingredients (not counting water, etc)

1.00 lb Wheat Dry Extract (8.0 SRM) 10.5 %
7.00 lb Munich LME (6.5 SRM) 73.7 %
1.50 lb Caramel/Crystal Malt - 60L (60.0 SRM) 15.8 %
1.53 oz Goldings, East Kent [6.20%] (60 min) 18.6 IBU
0.50 oz Hallertauer Hersbrucker [4.00%] (15 min) 1.9 IBU
0.25 tsp Nutmeg (Boil 15.0 min)
0.50 gm Sweet Gale (Boil 10.0 min)
1.00 tsp Cinnamon (Boil 15.0 min)
1.00 tsp Cloves (Boil 15.0 min)
1.00 oz Orange Peel, Bitter (Boil 5.0 min)
3.00 tsp Ginger Root (Boil 12.0 min)
1 Pkgs East Coast Ale (White Labs #WLP008)
 
Take caution when brewing with the cin, nutmeg, orange zest, and (especially) ginger. These things take a while to mellow out in a beer if overdone... If an amount is questionable, I'd say err on the low side for these things.

I brewed a winter warmer such as described in November 06 and it is just now starting to mellow a bit, with the spices still dominating more than the malt or hops... I'd say this beer will be hitting its peak not until 6 or 9 months...

Yeah, I think i may have overdone the clove, but the rest seems to be the right amounts...
 
Thanks All for your help. I just found out that my buddy is going to be coming back from over seas right around the time winter beer are coming back and it would be great to stockhis fridge with a keg before he comes back. Cheers
 
Winter Wonderland (the one with the spices...)

8 lb pale lme
1lb c60l
.5lb dextrine malt
.5lb torrefied wheat
2oz chocolate malt
2oz roasted barley
2lb buckwheat honey
2oz Challenger (60min)
1oz kent goldings (30min)
1oz kent goldings (5min)
1tsp irish moss
1oz kent goldings (dryhop)
3 cinnamon sticks
2 nutmegs (crushed)
3 whole cloves
2 whole cardamoms (crushed)
1pkg london ale yeast
1.5 cup molasses (priming)

everything from the dry hops down (except the yeast and molasses!!) gets put into secondary..

ok here's the other one...

Fireside winter warmer (it's AG but could be converted to PM pretty easily.....maybe extract but don't know if I could help you there!)

7lb 2row
1lb cara-pils
1lb munich
1lb flaked barley
.5lb light brown sugar
1.5oz cascade(60min)
1sp irish moss
1.5oz cascade (steep for 10min after flame out)
1pkg american ale yeast
.5lb lactose(boil w/priming sugar)
.75lb corn sugar (priming)


not as crazy as the first but still sounds good!

I've got a few other "holiday" recipes...

oh if you wanted this to be pm just figure out how much grain you can handle and the remainder multiply by .8125 that'll be how much LME you need...or by .6875 for DME
