What would the drawbacks be if I didn't add a 60 minute hop addition, but began hopping at 20, 10, and 5 minutes? BeerTools gives me 61 IBU if I do it this way. I'm trying to achieve a lot of hop character in an American IPA using Simcoe and Amarillo hops.
