Simple Sugar - 12 Brix?

I have a Bunn Frozen Drink Machine like this:

I have been buying frozen drink concentrate locally but not a lot of options as far a flavors and shipping for other flavors is expensive. I am considering making my own mixes and see how that works. According to the freezers manual I need to keep them above 12 Brix....I have no idea how to figure Brix, can anyone help?

1 brix is 1 gram of sugar per 100 grams solution (so 12 brix is 12 grams sugar with 88 grams water)

1brix =1.004 SG But at 10 Brix, it is closerto 1.041 - basically it is not exactly linear. In your case I'd figure enough sugarfor 1.050 SG would be a starting point for the the >12brix in the receipe.

Thanks for the reply. So would it be correct that using a hydrometer (the same one that I use for brewing) and this chart: http://www.fermsoft.com/gravbrix.php I could find the brix level in my mix?

Also I just used my hydrometer to test the commercial mix that I have in my machine now and it was a 1.1 SG which would be about a 25 brix? Would this mean it's about 2X the sugar level of a 12 brix mix?

That table looks correct. You will note that while 1.004 SG is close to 1 Brix, that doesn't mean that 1.100 is 25Brix - actually closer to 24 (table has 23.75). And yes that is about 2x the level they recommend.

As doing easy math, espcially if you need an 'at least' SG/4 should get you the Brix. Also my hydrometer has its own Brix scale on it, but I don't know how accurate it is for Brix. - this is one of those 'tripple scale' ones that lists SG, potential Alcohol (abv%) and the 3rd is Brix. I will note that I should begin taking the Brix, after all whenever I want the SG, that is the scale the it puts infront of me, and no amount of twisting seems to move the SG scale infront of my eyes. - I think it is a toast butterside down type thing. lol
