Obviously the answer varies depending on style, but say an average ale?

I don't ever touch anything less than 4 weeks old, and it's usually more like 5-6 wks before I start to drink it. It's hard to wait as long as I should though, especially since IPA (my favorite style) really starts to peak at about 6 months!

It depends on style.

I'll be suppin' my mild as soon as it settles and is force carbed. 10 - 20 days

Other normal beers I won't touch for 2-3 months.

An average 5-6% homebrew? Six to eight weeks. I rarely put anything on tap before 3 months.

6-8 weeks for most of the beers I brew. Sometimes I wish I had waited longer. Every beer that I tap tastes good, but after a month or so they get even better.
