Has anybody tried pairing these two hops before? I'm interested in what your experiences may have been. I haven't used Mosaic before but really liked Great Lakes Alchemy Hour Double IPA that showcases this hop. I have paired Citra and Nelson in an IPA and had good results...I'm considering maybe equal amounts of Citra, Nelson, and Mosaic in an imperial IPA recipe. Any thoughts on this?
 
Mosaic is a pretty new hop and Nelson Sauvin is sometimes hard to get, so there is a good chance nobody has tried this combo yet.
 
I've got 3oz of so of Nelly in the freezer....

Could always pick up some mosaic if you have some good results

I'll let you know. I'll brew it later this week and post my recipe once I've decided on a few details I still have to iron out...then I'll post my results once it's done. If Mosaic is a fruity hop like Citra, and Citra and Nelson pair well together...you know where I'm going with this. We'll see.
 
My experience with Mosaic was that it was actually fruitier and less piney than even Citra...most places describe it as tropical fruit but it was more like pink grapefruit for me. I just brewed a batch of 1-gallon beers with a simple grain bill and only a single flavor/aroma hop to test them, and Mosaic and Citra were among them.
 
I made a nelson/ mosaic apa. Used way more mosaic than nelson but, the nelson still comes through. Mosaic seems to change. Mine reminded me of a fruity simcoe. To me, nelson has a sharp flavor that I don't care for as much. The apa is good but, I would have rather used citra instead of nelson. Just my 2 cents. Mosiac is awesome though.

I love Nelson, but it's definitely one of those polarizing hops that people tend to really like or not like too much at all. If you don't like Nelson don't brew the recipe I'm about to post because there's a good amount of it in there.

So, did you brew this monster yet? Looks delicious. Let us know how it is going.

I brewed it a week ago from last Friday...so about 9 days ago. I, unfortunately, undershot my OG by 6 points...ended up at 1.072 which isn't terrible but not what I wanted. I tried a sample when I took a gravity reading a couple days ago, and it was pretty good but really green. It's impossible to really gauge this beer accurately at this point. I'll crash to my keg this Friday and start dry hopping...at that point I might get a slightly better sample and let you all know how it's going. I figure I'm still about 3-4 weeks away from knowing how good this beer will be.
 
I brewed an IPA using only mosaic hops and it came out great. Kind of grapefruity, but I think it would work well as a summer ale. Gonna experiment with Mosaic and a couple different hops when I try my first AG brew.
 
I also brewed a test batch of Mosaic IPA, and although everything I read said it tasted like tropical fruit, it reminded me more of pink grapefruit. My next beer with be a Mosaic-only IPA.
 
Mosaic and Nelson Sauvin are both quire tasty. I used those two hops along with sorachi ace, motueka, and citra in a super fruity pale ale. That one will be going into a secondary with a dry hop soon. The wort tasted quite unlike any other wort I've tried. I expect good things. My concept was a sangria flavor inspired ale. Mosaic is super tropical, and to a slightly lesser degree, so is citra. I had read a lot about Sauvin being described as "white wine-like." I opted for sorachi ace and motueka for their lemon and lime qualities, so hopefully all that carries through. I'm really excited to try this one. It will get dry hopped with a blend of sorachi ace, nelson sauvin, motueka, and citra.
 
So, I took a gravity reading tonight before I placed my fermenter in the fridge for cold crashing. My gravity is 1.008, and it tastes awesome...extremely high in tropical fruit flavors, just like I wanted it to be. I'll cold crash to my keg on Friday and begin dry hopping for about 10-14 days...depends on how I'm feeling around the 10 day mark. After tasting tonight's sample, I'm even more excited about this beer than I was before.
 
Dry hopping away. I'll taste a sample again in a week and see how it's doing.
 
OK, I figured I owe you all an update on Richard Simmons DIPA. Holy shnikes!!! If you like fruit-juice-packed IPA's this is a recipe that you will appreciate. It's SUPER juicy on the hop profile, and the honey malt only adds to the juicy-sweet flavor (disclaimer: I borrowed the grain bill from the Kern River Citra recipe and just scaled it up a bit, so this recipe isn't 100% original). This is exactly what I was trying to accomplish, and I think it turned out great. If you like really bitter or really piney DIPA's then this isn't for you. But if you like DIPA's with tons of tropical fruit juice flavors then you'll probably like this. I'm diggin' it alot.

Thanks for this. I am considering an amber with Sorachi and have been going every which way on combos. I am now considering trying this paired with Liberty and Centennial, then using Earl Grey tea late and DH for a tea like quality.
Haven't formulated a grain recipe yet but leaning towards

I finally brewed this one. I simplified the malt bill a lot using only half pound of crystal 15 and both light dry and liquid extract and 3/4 lb of corn sugar. Hop schedule was the same. OG = 1.074, FG = 1.014
Man, it's fruity!! I like a lot Citra and Nelson together, I have never brewed with them in the same beer, because I thought it wouldn't work, but they do play well together. Nelson reminds me of concord grapes A LOT! Citra reminds me of melon and peach. Mosaic is the best, tropical fruits a gogo!
It's still too young in the bottles to judge it properly, but this is the fruitiest beer I ever tried, for sure. Thanks Dave for the recipe!

I'm glad you brewed this...it's nice to get another HBTer's opinion. It was definitely the fruitiest tasting beer I have ever had...almost too much so. I liked it, but I wouldn't brew it again the same way.

First, I don't think it's necessary to have as many hop additions in the boil as I did...it was kind of a pain measuring out all those hops when I could probably just combine them all into 15, 10, and 5 minute additions...maybe some at flameout.

Second, I would probably substitute some of the Mosaic for some Simcoe, but that's just for personal preference.

Last, I would do a simple 7 day dry hop and call it good.

Let me know how yours turns out once it hits it comes into its own.
 
I like a lot Citra and Nelson together, I have never brewed with them in the same beer, because I thought it wouldn't work, but they do play well together.

One of my favorite IPAs I've brewed to date was a simple grain bill with mostly maris otter and a little bit of white wheat and rye and all Citra and Nelson hops. Those hops go great together.

I've never used Simcoe and NS together, but a Simcoe/NS rye pa or IIPA will probably turn out awesome.

I made a single hop Mosaic IIPA like 6 months ago and it was the best IIPA ever. I also made an APA and a Red Ale. All of them were delicious. Mosaic are very complex hops, they are piney, fruity, tropical, citrusy and dank, but in the best way. Also they always seem to change drastically over time. They are my favorite hops but still they are so complex that it's hard to figure out how to combine them with other hops. So far I've decided to use them in place of simcoe when formulating a recipe and they always worked great. Can't wait to the day I'll brew a Pliny "clone" that way!
 
Shoot I think my LHBS is outta mosaic. They're usually pretty good about updating their website and I don't see them. I guess I will have to make the drive over there. If I do I'm for sure gonna try a single hop test batch.
 
I stopped by today. They have plenty in stock so I picked up 2oz. I think I'll use Jamils Apa recipe and scale down to one or two gal batch size. I was thinking using magnum to bitter, then adding equal parts at 10, 5, flame out then dry hopping.

Warrior @ 60 to ~10 IBU
1oz NS + 0.5oz Mosaic @ 10 & 0

I had a commercial Nelson IPA that was dry hopped with Mosaic and it was unreal. Seriously one of the best beers I've ever had. Those hops do pair well together.
 
can we get an update? filling up my cart with ingredients!

Sure, sorry I forgot to report back. It was decent but not mindblowing. The NS hops came across well enough (kinda citrusy) but not really all that unique. Domestic C hops do the same for less money. The mosaic is more interesting and IMHO. That said, I got my NS hops from my LHBS and they store them in a clear glass refrigerator. I find the hops from there can lose some character due to light exposure. I'd be tempted to use centennial or citra with the mosaic next time. Currently have a mosaic/chinook IPA on the go. Will be interesting to see how this combo works out.
