Which type of Malt ?!

Hi there !

I bought recently some pounds of DME .

My Problem is that I don't know which type of Malt that is !!!

The seller , who don't know either , gave me a Sheet as "Certificate of Analysis " .

The following information is written on this sheet :

DME Powder

Colour : Light

pH ( 10% Solution ) : 5.3

Acidity % as Lactic acid : 0.95

Moisture : 2.45

Reducing Sugar % as Maltose : 64.2

Protein % dry basis : 4.2

Ash % : 1.5

The Water which I use for brewing with DME has the following Profile :

bicarbonate : 29 ppm

Ca : 9.8 ppm

Mg : 2.3 ppm

Sulfate : 19 ppm

Chloride : 0.7 ppm

Na : 4.7 ppm

pH : 7

The Beer is in the Primary since yesterday and the Color is dark brown .

Can anyone from all these information find out , which type of Malt it coud be ?!

Is the color of the Beer because of the pH of the Water ?!

First, beer in the fermenter always looks darker than it does in the glass. Don't worry about the color.

As for the types of malt extract, I'm guessing its "light" dry malt extract because of the color description. My advice is to always use as light a variety of dry malt extract as possible - usually "extra light" dry malt extract. This way you will start with a neutral base on which to build your beer, using speciality grains to add flavor, colors, etc.
