I bottled my Orange hefeweizen last night and washed my yeast according to the sticky at the top of this page. But then I got thinking how 3068 is such a top fermenting yeast, should I have skimmed off the krausen instead to get more viable yeast? I have also read that washing the yeast cake leads to loss of the ester formation the weizen yeasts are used for. Any thoughts on this?
 
I have washed and reused weizen yeasts before with no issues. But I have no experience with 3068. You will still have viable yeast in suspension with a top fermenting yeast, but maybe not as much as you would have otherwise. If you fear a loss of ester formation, just under pitch next time :D
