Hello experienced homebrewer.

I'm thinking of brewing this SMaSH recipe using the remaining ingredients of
my inventory:
- German Pilsner

- Saaz Hops

- SAFALE S04 Yeast

Ideally I would target about 1040 OG.

Would this be ok ?

I can change S04 with S33, T58 or WB-06 if needed.

I will appreciaty any help.
 
saaz doesn't have much flavor and since it has a very low alpha acid level, it would take relatively more hops to get the bitterness right. plus that ale yeast doesn't have much flavor.

...but i'm not going to argue with revvy. revvy knows a lot more than me.
 
I've been thinking of doing almost the same thing only with wlp011 euro ale. I have been getting hooked on pilsners lately. I've done the traditional lager route. I also have a recipe I've done three times now with pilsner and a 2 pounds of vienna an a half pound melanoidin along with saaz or perle hopped to about 20 ibus. It is very easy to drink beer.
 
So I decided I'll split this batch and
use S04 on one half, and S33 on the other.
