Does anyone ever put a bit of a fizz in their wine and hows it done ?

Wine bottles are not designed to handle pressure.

Compare the heft of a champagne bottle vs a wine bottle and you will notice a major difference.

Beer bottles don't need to be as thick because they are much smaller diameter.

I'd imagine that it's the same as carbonating beer?

There are a few wine styles that come carbonated (e.g. Lambrusco)

Suppose i could always nick a few of my dads beer bottles

Another thing i know red wine should be in dark bottles but would it matter if i put white wine in a dark bottle ?

Nope, it'll be fine. The purpose of dark bottles is to prevent light damage, which isn't much of a factor unless you're aging your wine for a long time or you have the unfortunate habit of leaving your wine bottles in the direct sunlight.
