Need a Pale Ale recipe for 10 oz of Hops

Looking for a Pale Ale recipe. I have approx 10 oz whole leaf Cascade hops that need to be used. Looking to use them all in one 10 gal batch. Wondering if someone would put together a recipe with additional hops that I could make using all of the Cascade hops. I am pretty open and I will try anything I just need to use up these hops and they have been in my freezer a year and a half. Any help you can provide would be appreciated.
 
What AA%?

10oz of Cascade in 10 gallons should result in an IPA - is that acceptable or were you just looking for a traditional pale ale?
 
Sorry I should have posted that i grew these hops in my backyard. NO AA% info, grew them dried them and sealed them in a zip lock adn in my freezer for the last year and half. SMBO says thay gotta go as they take up to much room in the freezer.
 
Yea 10oz of Cascade converts to 25 gallons of EW's Haus Pale Ale. You'll probably have to make an IPA to use all of those hops in one 10g batch,
 
Ok I am trying to copy Edworts Haus into my Beer smith. Beersmith doesnt have Crystal 10L what should I do. Also is the Vienna US or or German anyone know? I need to scale everything up to 10 gal
 
just use any clean fermenting yeast. Notty is nice just cause it is a very clean/neutral yeast. might consider WLP001 or WLP029 for something slightly different. both are very clean. 001 if you push the ABV envelope though

that is the only real problem with Beersmith, and the reason I still use promash... I'd find a spec sheet. most LHBS should carry them or email your grain distributor.

So more hiops are added toward the end of boil than at the beginning. Thanks I may go this route.
 
IMO 6.5oz of bittering hops is crazy, I would use an ounce or two at flameout and one or two for dryhopping.
 
You said you don't know the alpha % if u remember correctly. So that said is push more hops towards the end of the boil because if your cascades are infact like mine 10.1% you might end up with with a 200 ibu IPA if your not careful. Might consider 4oz for dry hops. 2oz at 60 and the last 4 spread evenly over 30-0 min. That's what I'd do but this is home brewing. The wort is your oyster, make it how you will :)
 
I'd say if you're going to go over the top with that much hops, you might as well go for a nice Imperial IPA.

My Tits Up IIPA has won a few awards...the recipe below simply subs in your cascade for my original hop schedule...with just a few mods.

This should keep you in the pale ale IBU range. Just made an APA using all my cascade up. Ended up dry hopping 13 gals with 7oz of cascade... it smells great.
 
I've become a fan of the big late hops addition lately. One idea might be a simple ~1.060 2row+carapils+.5 lb 60L grain bill with:
2oz FWH
2 oz 20 min
2 oz 10 min
2 oz flameout
2 oz dry
 
I've brewed pale ale with homegrown whole hops a couple of times, and in both cases they were stored 1 year+ in ziploc bags in the freezer. I can tell you that the aroma was deteriorated and because of that, my first ale was not terribly enjoyable. The second time around, I shifted the homegrown hops to earlier in the boil and supplemented with fresh hops pellets from the LHBS for aroma and dryhop additions. That second ale was quite good! The homegrown hops had lower aa% than average, so the bitterness level on the second ale was better too.

Your hops might be in better shape. And lots of people like to make a batch using 100% homegrown hops to showcase the fruits of their labor. That's perfectly understandable. I offer my story simply as another brewer's experience.

Thanks for the info I will probably go your route. My hops are not in the best shpe just by looking at them. Ton's of the resin is sitting in the bottom of the bag.

I'd change the hops to:

4 oz cascade 60 minutes
2 oz cascade 15 minutes
2 oz cascade 5 minutes
2 oz cascade 0 minutes
Dryhop if you can scrounge up some more.
 
As someone else mentioned, if you want to do a pale ale, you can do all late hops. I recently did an all cascade pale ale that finished at 35-40 IBU (don't have my beer smith computer handy) and used 8 oz in a 5 gallon batch, all in the last 20 mins and dry hop. It was pretty tasty and scored a 33.5 in the upper Mississippi mashout to boot. You could use 1 or 2 oz bittering then the rest for aroma and flavor in a 10 gallon batch.
 
Epic Pale Ale uses about 10oz of cascade IIRC for ~5 gallons if you want some inspiration.

There's a Can You Brew It clone recipe on this forum somewhere.
