I've tried hops as an asparagus substitute. Couple of things to consider. First low alpha taste better than high alpha. The high alpha is just to bitter, even cooked. Mt hood and cascade are good. My chinook ehk.

Another thing to consider is young "soft" bones are good. Take your end of year cascade, which might have a bone as thick as your finger. That's not chewable. Ut needs to be you first growth early stuff which are thin and soft. Chewable. Points to consider.
