Dogfish head-ish 75 minute IPA

This brew is inspired by DFH 60 & 90 minute IPA. I also took some inspiration from Yoopers recipe. I do not really care for Simcoe hops though, so I used varieties I like. I like 90 minute a lot, but there is something about it, that if I could change, I would :).

So here it is... Tell me what you think, if it turns out, I will put it in the recipe db.

Oh, just for ease of computation... I started with 2oz Columbus, Cascade, and Centennial. Mixed them up in a bowl, and added a heaping Tablespoon for each addition. Came out pretty close.

Edit: I plan on dry hopping as well, not exactly sure what or how much. I figured I would keep the same theme going, some Columbus, some Cascade, and some Cent. I planned on dry hopping once in the primary, and once in secondary.

75 Minute IPA is actually not unprecedented. At the DFH Restaurant, they serve it...basically as a 50/50 mix of the 60 and 90. Good luck.

Yeah, that's kinda what I was going for as that's what I order at their ale house in VA. It is close to my local HBS, so I stop there sometimes for inspiration. I find 90 minute a little too toasty and Malty, or not quite hoppy enough. So I backed off on the Amber malt from other 90 minute recipes online, and upped the IBU's just a little.

My goal in this recipe was to try out continuous hopping, and create something similar but with a few tweaks to suit my palate (hopefully). It is bubbling away right now. :mug:
 
Quick update on this brew. I added 2oz of Cascade pellets on 3/31. First time I have ever dry hopped in primary. SG was 1.014 at that time. I racked a week later and added 2 oz of whole leaf centennial. SG was 1.010. I plan on bottling this weekend, looks and smells wonderful. 10 oz of hops in this brew, it better be good :)
 
I brewed a 90 min IPA and it turned out awesome - not exactly like DFH's, but very tasty. I didn't use an exact hop addition schedule, just tossed in a few hops every minute or so. Drinking while brewing this batch, got a little hazy:)

It definitely benefited from a longer bottle conditioning time. I had a few stashed back in the brew closet, opened one up the other day (it was brewed back in September or so). I think it gives it time for all those flavors to settle down and harmonize.

They actually just made a set of 75 minute firkins. We're begging to get one of them at my local tap house up here.
 
Just popped another one of these... Sure is taking its sweet time carbonating. Tastes great. Needs a little more fizzy.
 
Any further update on how this turned out? Was thinking of making it and as a bonus I have all those hops on hand. I always get the 75 at DFH and I know its a mix of the taps. For bottles its conditions in barrels I think. 90 minute is generally too much for me.

Isn't it "terrible" that the LHBS is right across the street from Dogfish? Gets me everytime.
 
Wow, yeah... I think I might have one left :). It turned out really well, although I am not sold on the whole continual hopping thing. It did take a while to carb up, but it was a big hit with fellow hopheads. The grainbill will turn out something closer to a 90 minute, so if you want to decrease the base/munich to get to ~7.5 or 8 that should get you closer to actual 75 min.

It is quite convenient that after visiting myLHBS you can run across the street for some inspiration :).
