Good day,

I'm looking to make an ESB brew following a recipe from a fairly old book. It asks for 5 Saccharin tablets. Would anyone know how to substitute this ingredient? I'm not big on using cancer causing artificial sweeteners.

I'd just leave it out.

2nd idea: Post your recipe and I'm sure you can get some feedback on if the recipe is missing anything, and possible substitutions.

3rd idea: If the recipe is dated, you might consider just finding another, more current recipe.
 
Saccharin tablets would be designed to put more residual sweetness into your beer. So focus on getting more unfermentable sugars into your recipe. You could add lactose sugar or if you are an AG brewer, make your sacch. rest a bit warmer? Your yeast choice could also make a big difference
