1gal blackberry,pomagranate mix (juice) (No boiling )
1gal cranberry (juice)
1gal white grape (juice)
3 1/4 lbs sugar
1Pkg KC-1118 yeast
2tsp pectic enzyme
1/4 tsp tannin
1 1/2 tsp yeast nutrients
1tsp Acid Blend
3 campden tablets(crushed)

Put juice in primary and sugar,stir until sugar is all dissolved,add crushed campden tablets,pectic enzyme,tannin,yeast nutrients,acid blend,stir and cover for 12hrs. add yeast ,cover stir every 3rd day.for 14 days. rack into secondary,air lock,after 5 days you can top up with water. no water in primary mix. may be racked in 30 days,then rack in addictional 60 days or until clear w/no lee's. should make a good sweet wine.I'll let you know when mine is ready to drink.

Is this a 3 gallon recipe?
 
Well racking tonight for the second time,very clear but sill working,wait for it to finish working,taste is great ,mild,sweet,I don't think I will have to back sweeten when it is finished.
 
Bottled the wine,very good flavor,i'll open a bottle in 6-8mo. we will see how it turns out when it ages,it should be very good.
 
Have you ever made this as a sparkling wine? I'd like to try it out and split it so one half is still and the other half is carbonated.
