What would 20lbs of American Two-row Pale equate to in lbs of extract? and what kind of extract should I be looking for?

It's roughly 15 pounds of LME or 12 pounds of DME.

In general, 1 pound two-row= .75 pound LME = .6 pound DME.

Use "pale" or light or even extra light extract.
 
I've always substituted Light DME (usually not extra light. I think it's Briess Golden Light and Munton's something-or-other). I think it's largely a matter of personal preference. I've had good results with DME, so I've never bothered trying LME. Others seem to like to use LME or a mix of DME and LME.
