Brewed a Weizen yesterday. Hit all of my mash temps. But I ended up adding an extra 40 minutes to achieve conversion.
40 minutes might not sound like a lot in the course of a brew day. But I'm not sure the schedule I planned was the best schedule for a wheat beer.
Any suggestions for a mash schedule with these ingredients with the goal of high attenuation?

Here are the details of my schedule:
Ingredients
9lbs Wheat
2lbs Pale
Schedule
Infusion 2.75g (1 qt/lb) 122F - 25min
Infusion 1.5g (1.55 qt/lb) 142F - 25min
Decoction (1.33 lbs) 25min -> 154F - 25min
=Iodine tests+ (Black) +20min
=Iodine tests+ (Red) +20min
=Iodine tests-
Infusion 2.5g (2.5 qt/lb) 168F - 5min
Sparge 7.25g - 45min
Total conversion time - 190min
