So what does this tell you or me...

It tells you that you have pretty nominal water with the exception of the nitrate which is 4% above the EPA MCL for that ion. Don't give it to infants.

As to how to brew with it - there are an infinite number of answers. It is low enough in mineral content that you could prepare a multitude of waters from it by salt addition. The only simple answer is found in the Primer in the Stickies. You would dilute it with 4 parts RO water (which would reduce the nitrate to 2.1) and follow the suggestions there.
