3 Pkgs WYeast 1056 – American Ale
Mash at 150 degrees for 90 minutes.

Basically we have grown tired of drinking incredibly sweet IIPAs and we set out to brew a drier and lighter bodied offering. Obviously the lack of crystal malts is probably the biggest departure from many of the other recipes for this style on the forums. We saw incredibly high efficiency for our system with this recipe and overshot our gravity somewhat. Despite the ABV ultimately ending up slightly high, we were able to produce a IIPA with a fantastic hop profile and an appropriate malt backbone. Beautiful coppery/orangy color with a stark white head and great lacing are right on for the style. The hop flavor and aroma is reminiscent of peaches and is quite pleasant considering many disparaging remarks have been posted about the "harshness" Chinook can lend. This one proved to be a good representation of an IIPA for the hot summers down here in the FLA. Any feedback would be greatly appreciated and let us know if anyone has an opportunity to brew this one!
 
How is Warrior as a dry hop? I've only thought of it as a bittering hop. I like how you kept the IBUs under 100, even with a 1.091 OG.

I was down in Florida last month and friend took me to the tasting room at Cigar City and I was blown away at how good their beer was.
 
Cigar City is phenomenal. We are really fortunate to have such an awarded brewery here in Tampa. Coincidentally I'll be in Chicago in a month or so. Anywhere you would recommend while I'm there? I've had a couple Goose Island brews. I really liked the Matilda and the 312 was OK. Didn't have a chance to go to the brewery though.
 
Warrior actually worked out really well as a dry hop. That with the Chinook gave this beer a fantastic nose. Keeping the IBUs a lottle lower made the beer surprisingly smooth while maintaining an excellent hop flavor. Its a dangerous brew, at 9.5% abv it goes down way too easy.
 
Goose Island's brew pub is great if you can make it there. They offer a lot of specialty and seasonal beers that are not distributed that I enjoy. If you make it out to the west suburbs, Two Brother's Brewing makes some great beers and Five Rabbit is a local, all latin american brewery that many local restaurants carry, but sadly does not have their own pub.

Back to the recipe. I'm interested to try Warrior as a possible late hop addition. Thanks for the recipe.
 
Yeah with this particular hop schedule we noticed a pretty interesting peachy type aroma and flavor. Not over-powering but a great addition to the mild malt flavor. Had read in a bunch of places on the forums that people found Chinook/Warrior to be harsh in many cases. This isn't the case at all in this brew.

If you are going to be in Chicago its a short drive over to Three Floyds. Best beers in the world in my humble opinion.
