Anyone have any non-gambling must see/do out there?

It's not your typical debaucherous vegas getaway :( - I got in-laws there now, so it has to be family stuff.

I lived there during the "family vacation destination" period & it was a total flop. However, the dam tour is cool and Mt. Charleston can be nice, if it isn't snowed in. Some of the newer casinos have family stuff, MGM comes to mind.
 
Check out 777 brewery at Main Street Station. Y'all can sit down and have a good meal. They make a pretty good IPA.
Valley of Fire State Park. A few miles north of Vegas on I-15. Beautiful rock formations, good hiking and Native American petroglyphs.
Death Valley is a nice daytrip also.
Oatman, Arizona would be a nice daytrip. Old ghost town that still has that funky old west feel to it. They have a bunch of wild welfare burros that hangout all day.
It's fun to watch tourists get the crap kicked out of them when they step between mama burro and her baby.
Hoover Dam, best dam tour around.
Just wandering thru all the Casino Hotel lobbies looking at all the artwork.
Fremont Street after dark to see the overhead lightshow.
