I am brewing a dubbel this week, and I was wondering how long I should let it sit in a fermenter.

I know that I read a recipe for a tripel that recommended that the beer sit in a secondary for 9-12 months.

What about a dubbel?

i made a dubbel recently. i left mine in the primary for over a month. The main thing is to not transfer until primary fermentation has been finished for several weeks. THEN transfer to secondary and leave it for 2 months or more. it has been in the bottle for about six months now.

that was my procedure. for a big belgian brew like that, longer is always better.

I'm getting ready to brew a dubbel recipe from a Randy Mosher book and he recommends 8-10 weeks of maturation.
