why would one use a secondary fermenter? is it always necessary to do so? and also which is the best way to prime, from your experience?

Racking to a secondary is not necessary. The only time I secondary is if I'm aging a beer for more than a month or if I'm adding fruit to a beer. When it comes to priming, I would highly recommend getting an autosiphon. They are relatively inexpensive and they work great.

+1 secondary not usually needed; primary for 3-4 weeks.

When you say priming do you mean for carbonation? If so, use corn or table sugar to prime your beer for bottling.
