So I know there is lots of propaganda out there saying that SS is better than aluminum for pots, but what about specifically for a HLT? Only water comes in contact with it, thoughts?
 
Just boil water in the pot for about 1/2 hour to build an oxidation layer. It will be gray in color, do not try to scrub it off.

This will keep any metallic flavor from leaching into the water.
 
I've used both but my aluminum pot does seem to take heat slightly faster which is convenient.
 
The only drawback to aluminum I've read that makes any sense is that you can't really use oxygen based cleaners on them (PBW/Oxyclean). Just keep that in mind if its important to you.
