Hey folks. I'm looking to brew the Hop Hammer recipe from Jamil Z and Jon Palmer's Brewing Classic Styles and I'm wondering what kind of wheat malt to use. I haven't brewed with wheat yet and his recipe simply says "Wheat Malt". When I look at several homebrew shop sites they have several kinds of wheat including pale wheat, white wheat, torrified wheat, unmalted wheat, dark wheat etc. I assume dark wheat is not the right one to use and I was leaning towards using the pale wheat. Which one would you suggest?

Thanks for the reply Gila. Would it matter that he suggests wheat LME for the extract recipe? I had read somewhere on HBT that wheat LME is a mix of white wheat and barley.

I have often wondered the same thing in recipes that call for wheat and have always gone with white wheat.
