Made 5 gal of a a simple "blonde" today for my gluten intolerant aunt:
60 minute total boil with..

6 lbs White Sorgum Syrup
1.5 lbs Demerara GF Cane Sugar (Florida Organic)
2oz Maltodextrin - added early in the boil
1oz Brewers Gold 60 mins
Centennial - 1/4 oz at 45, 30, 15 and 5 mins (1oz total)
1/4 oz coriander cracked seed - 3 mins
1/4 oz orange peel bitter - 3 mins

Danstar Nottingham Dry at 90 deg F

OG = 1.064

The final wort tasted a little sour, which is probably due to the sorgum. Hope it turns out enjoyable for her.

I've mentioned before that sorghums have a real high mineral content and unless you mask it with something that mineral taste will generally come through. Cascades with their citrisy tang might help.

Also, noticed that this thing is still popping in the airlock after 6 days. Should be interesting. I wanted to keep it really simple since this was my first GF attempt.

Brewing is chemistry and chemistry is not , or ever will be simple and straight forward.

Well, Im transfering to the 2nd for a few more days. Its been in the primary for 11 days and here are the specs:
FG = 1.014
For a 12 glass:
6.7% ABV
210.5 calories
20.4 grams of carbs

Smells and looks like beer....so I am hopeful!

Make sure you let it age a little before making any final judgements
