So, I am still quite new at this with only 3 brews under my belt. Yesterday I was brewing an American pale ale and got caught up drinking and talking during the process and took my OG reading AFTER pitching my yeast which was 1.041. My recipe called for an OG of 1.052-56. Are my numbers off because I took my reading after pitching or does it even matter?

How long after pitching did you check? If it was within a few hours, you're good. If fermentation started (after several hours likely) you read something other than the OG.

That wouldn't affect your gravity. If it was an extract brew then the water and extract may not be thoroughly mixed, which would cause your reading to be off.
