So far I have been brewing everything in the 66 degree range because, well, people say cooler is better in most cases.

However this one I'm using WLP023 Burton Ale Yeast from White labs and their site says Optimum Fermentation Temperature: 68-73°F

DO - just let it go at 70-72 ???

(see - told you it was obvious)

Burton is one of my favourite yeasts, I find it's a little too heavy on the fruity esters above 70 - for my tastes anyway. It does a great job at 68-69 so that's where I ferment it.

I generally try to ferment my ale yeast at the bottom of the published range or below. The yeast will tell you. If you're below the published range and it is happily fermenting away, then go with it. If it seems too slow, then let it warm up a little.
