I'm going to brew 2 test batches. 2.5 gallons.
Here are the recipes for 5 gallons.
I'd like imputs!

Doppelbock

2.5kg (5.5 lb) Munich
2.5kg (5.5 lb) German Pils
2.0kg (4.4 lb) Vienna
100g (0.22lb) Carafa 2

1oz Tradition or Hallertauer FWH + 60m
1oz Tradition or Hallertauer 5m

30m @ 151F
30m @ 156F
15m @ 162F
Mash Out/Batch Sparge @ 171F

White Lab German Lager, Bock Lager or Oktoberfest, depending on availability

OG 1079
FG 1018
ABV 8.1%
EBC 42
IBUs 27 (IBU/OG = 0.34)

Rauchweizenbock

2.0kg Munich (2.2 lb)
2.0kg Wheat Malt (2.2 lb)
1.3kg Smoked Malt (Rauchmalz) (2.87lb)
1.3kg Oak Smoked Wheat (2.87 lb)

1oz Tradition or Hallertauer FWH + 60m
1oz Tradition or Hallertauer 5m

S-04 or S-33, or anything else you would recommand

60m @ 153F
Mash out / Batch sparge @ 171F

OG 1072
FG 1018
ABV 7.2%
EBC 19
IBUs 24 (IBU/OG = 0.33)
