Really like storm king by victory and will be brewing my first RIS this weekend trying to emulate this brew.

What do you think of magnum for bittering. Simcoe at 10 and Amarillo at 5

I used a combo of Magnum (1.5 oz), Willamette (1 oz.) and East Kent Goldings (1 oz) for my RIS.

Victory doesn't specifically name the hops used but try do say pacific northwest what would fall in line with this?

I think I want to use since to get some piney-ness in there. No sure about using Amarillo though

What would go good with simco
then or should I just do Magnum and Simco?

You could. I would maybe do Chinook to add a little extra dimension to the Simcoe, or maybe EKG or some other English type? For mine I did Nugget FWH, then Centennial & NB @ 15 and Liberty @ FO.
