I have some 3-4 yr old hops vines that are about 2 inches tall right now. I want to prune the roots to prevent the hundreds of little offshoots that will be appearing over the summer. Should I have done this before they sprouted this year or can I still do it. Any advice? Thanks

You can still do it. As for those hundreds of little offshoots, you'll see many more when you dig it up than you had last year. If it's that big you may want to dig it up and run a bow saw (or whatever you have) right down the middle and stick it back into the ground. Go for it, you'll have more time to drink rather than going out every other day to remove extra shoots!
