Has anyone used US-04 or similar beer yeast in skeeter pee? I have a batch of Apfelwein fermented with US-04. Its been about a month and I’d like to whip up a batch of skeeter pee but don’t have any good wine yeast cakes available at the moment.

I’m thinking I may need to back off the sugar a little bit so the yeast don’t get overwhelmed.

Any thoughts?
 
I did a skeeter pee iced tea mead on a us05 cake which turned out great. Followe the usual recipe. Came out around 9%. Smoother than the stuff I made with wine yeast. I say go for it!
