I'm going to do my first all brett. Lambicus beer. I have a package of wyeast brett. So how large should I make my starter for a 1.064ish gravity? I will probably just do all pale or pils malt. maybe some aromatic.

I tend to go with a lager sized starter (about double a regular ale), Brett is a slow grower so it's nice to give it a head start. I'd start small then step it up 1-2 times, those packages don't have as many cells as the big activators (they are much better than the White Labs Brett tubes though).

Good luck.

I agree with Oldsock....

also, there is no need for a 100% brett beer to take more than a month or so to finish out
