How does this Wheat beer recipe sound?

I'm thinking about brewing a wheat beer.

Using the following:
2 - 3.3 lbs cans of Mutons Wheat Malt Extract
2 - 1.0 lb bags of Mutons Dried Malted Wheat Extract
1 - 1.0 Ounce of UK First Gold Hops pellets
Almost 6 gallons of water.....or maybe 5 gallons...not sure

Thoughts?
 
Unless you know the extract is fresh, I'd use all DME, and I'd throw in .75 lb of Carapils or something to aide head retention.

Other than that it sounds pretty horrible, send me a case when it's done and I'll let you know for sure.:D
 
so basically:

You know the AAU's of the hops?
and I second adding .75 of carapils for steeping.
