I seem to remember that live yeast can be frozen in tin foil to be used at a later date, if anyone knows if this is correct, what is the procedure?

If you accidently froze a smack pack, thaw and use with no problems. If you are looking for longer storage options, you should look into making a frozen yeast bank. Use the method I linked to, or slant the yeast on malt/agar solution. Ice crystals from water can damage the cells.
