I thinking about brewing this recipe as an IPA: 10 Gallons
20 lbs - 2Row
3 lbs - Honey Malt
1 lb - Vienna
1.5 lb - 30L

Hops:
Falconers Flight
2.5oz @ 60
2oz @ 30
2oz @ 15
2.5oz @ 5
Dry Hop 2oz

Yeast
Either US-05 or Nottingham

Batch size?

I'd ditch the honey malt for sure but the crystal malt is probably ok. If you're in love with the idea of honey malt, the ditch the crystal. You don't want both in an IPA. I'd go up to 5-8% with either crystal or honey malt, or a combo of both, but no higher.

I've never used Falconer's Flight, so I have no idea about the hopping!
 
falconer's flight is supposed to be a substitute for simcoe I believe?

I'd say with that OG:IBU ratio you'd be okay with a little sweetness in there...that being said I have never used honey malt in an IPA. So I don't know just how sweet it is. Though it sounds interesting for sure.
 
I recently brewed my first original recipe IPA and used crystal 40 and honey malt and it turned out awesome. I matched my projected SG with my IBU's (used chinook as my bittering hops and amarillo for flavor, aroma and dry hopping) and it worked out great.

Sampling some of that said IPA right now ... :rockin:
