I bottled a batch today and plan on brewing again next weekend.

Am I ok to store the 2 1/2 gal of star san I mixed up today in my fermenting bucket until next weekend?

You're fine for short periods, but don't do it over an extended period.
I had a bucket I used just for Star San, and over the course of about 9 months the bottom of the bucket developed a slow leak.

As long as the ph is below 3.5(I think that's what it's supposed to be don't quote me) but you can keep using it for months.

Is it also true that as long as it still makes foam it is fine?

I'm more worried about my fermenting bucket getting wrecked...

No. It makes foam because it contains a small amount of surfactant. It sanitizes because it's phosphoric acid based. As others said, the pH is the only indicator. A graduated food grade bucket is like $5 at Home Depot, the bucket isn't something worth worrying about.
