I have some meridian hops that i have been itching to use in a wheat based IPA. I thought i would pair them up with some citra and hop burst em. I was wondering if my grain bill needs some tweaking. Do you think it need some crystal or something along thou's line to darken/fortify. Is it to much wheat

What is the intention of the flaked and torrified wheat?

Flavor? The grain bill is loosely based off of sumpin wild which use torrified wheat. Figured flaked couldn't hurt

I would think it would also provide body and head retention. I'm interested in using wheat in my next IPA for body without sweetness like Crystal Malt. I always use 8oz of C-80 in my IPA's for color and body with 2-row as the base grain.
 
That is correct. I'm thinking a small amount of dark wheat to give it some color

what if you roasted some of the wheat at 350 for about 15 minutes on a cookie tray? I have heard you can make Victory Malt by doing that with 2-row. It takes the color from 2 SRM to 25 SRM.
