Just brewed up a hefeweizen, and its been chugging away for the past couple days. Day 2 I had to attach a blow off tube, and now I'm back to the airlock. When the foam was bubbling up out of the tube (through sanitizer), it smelled pretty bad. I don't know how to describe it other than to say it smells like barf. It continues to smell this way coming out of the airlock. I was pretty careful about sanitizing everything with San Star, and the fermentation started up in about 5-6 hours. Should I be concerned about infection?
Here's my recipe:
- 6lbs Bavarian Wheat DME (60/40)
- 1lb Flaked Wheat (Steeped 150 for 30)
- 1 oz. Saaz (60)
- 2 Lemons Zest (pasturized in small pot @ 160 and added to cooling wort)
- Wyeast 3068
The one thing that didn't go according to plan - I wanted to use my glass carboy, because I'm not doing a secondary so I funneled into it. I was afraid of having too little head space for such an active yeast so the final volume was more like 4 gallons rather than five.
Any insight appreciated.
