Which layer is the good yeast?

I dumped out of my bottom valve of my conical for the first time last night. I got rid of the trub, then dump the remainder into a sterilized mason jar. I put it in the refrigerator overnight (I didn't have time to do anything else with it). It stratified into what you see in the picture below (taken this morning). Which layer is the good yeast? The yeast is Wyeast 1968.

that white stuff is yeast too. 1968 is some thick ass **** that turns into like a cheese layer, akin to yogurt when you first cut into it.
