Is it the final gravity that governs how sweet the beer is or is it the amount of hops that balance and determine how sweet the beer is. I always thought it was the gravity but I looked at a chart of some commercial beer and Sam Adams Boston Lager's FG is 1.016 Anything I make above 1.012 is really sweet. So now I'm really confused.
 
If Starting Gravity (SG) - 75% (approximate attenuation for most yeast strains) = Finishing Gravity (FG), then the yeast have fermented all the sugars they can. If you have this ratio with your FG of 1.012 and it still tastes sweet, it's possible you're somehow introducing unfermentable sugars that remain in the final beer.
