Well I put one of two PartyPigs from this batch in the fridge on Tues to drink on the 4th.

The good: Great aroma and hop flavor, not overpowering even at 100+ IBUs. Great color and clarity. Also, does not have an alcohol "bite" despite being 8.4%/ABV.

The bad: The sorghum twang is still very present. Pig #1 is poorly carbonated.

I believe both of the "bads" were caused by my lack of patience. I wanted some homebrew for July 4th and rushed this batch thru the process, particularly the bottle conditioning time:
Primary - 15 days
Secondary - 11 days
Bottle conditioning - 14 days

Based on everything I've been reading, these times, especially the conditioning time are insufficient for high gravity brews, yes? I'll let the second Piggy sleep for another month or so before I put it in the fridge. Don't get me wrong, the beer is very drinkable, but the lack of full carbonation is a bummer...
